It’s been really cold and rainy over the past few days and I found myself looking for comfort food. Whilst I was thinking what could be quick and easy to make, dumplings came to mind. I’m one of those people who, although they love great tasting food, don’t have the luxury of time to spend in the kitchen. So I’m always looking for quick, tasty meals that my family will enjoy. Today I made my dumplings with chicken curry but you can make it with any curry of your choice.
2 1/4 cups flour
1 tsp yeast
1 tsp salt
2 tsp sugar
1 tsp mixed herbs
1 tsp ginger and garlic
1 tbsp cooking oil
1 cup warm water
Mix all the dry ingredients together in a bow, add cooking oil. In a cup stir ginger and garlic into the water (if you are not a fan of ginger and garlic you can leave it out). Add the water mixture into the dry ingredients and knead untill well combined. Put in a warm place for about 30-45 minutes (if your microwave has a warmer function you can put it in there for less time)
Make round golf size balls and place them in your curry. Simmer for 30 minutes.
You can serve with vegetables or salad. 🙂
